This is where our hand-harvested grapes become wine.
Our goal? Nothing more and nothing less than producing excellent wines, and striving to get the best out of everything that nature provides.
In the cellar, we take the greatest of care to guide our grapes through fermentation and ageing processes as gently as possible in order to produce pure, vintage-typical wines. Through our extensive barrel-ageing and a lengthy spell on the lees, we create authentic wines that are made to last.
In 2017, as it became clear that the historic, slightly cramped wine cellars of the castle were no longer sufficient to handle the requirements of modern-day wine making, we took the decision to create purpose-built premises for wine production.
The building has now taken its self-assured place in a central location in the estate: a contemporary element, which also provides outstanding facilities for the cellaring and maturing of our wines. and provide the wines with all the space they need for processing, ageing and storage.
